What makes an air filter "Hi Flow"?

So my question is simple, real but simple. What makes an air filter Hi Flow? Going stage one on my 17' SGS and looking at the options. I can replace just the element with a Hi Flow element from either Screaming Eagle or K&N. The elements look much like stock, even about the same size. So, what makes them Hi Flow?
 
They are usually an oiled gauze filter media that is more "open". They let in more air, but unfortunately, more dirt too. If you put on a larger oiled gauze filter element (like a K&N), the pressure drop and flow velocity through the filter will be less and you will recover some filtering efficiency to keep your engine clean inside.
